Experiment: Roasted Tomatillo Salsa Verde
We’ll see how this comes out. I’m making roasted tomatillo salsa for dinner tonight (to put on turkey & green chili tacos… aka: leftovers
) and sort of “winging it” with the recipe. Using an amalgamation of these two recipes.
And yes, I’m sure you’ve guessed by now, but this is a case of “So, we bought these tomatillos at the farmers market and now what the heck do we do with them”-itis.
Btw: best way I’ve found to roast garlic and tomatoes? In a muffin pan, as such:

^^ still have to be drizzled in olive oil & salt & pepper

I’ll give you an “A+” for creativity on that one!
Never thought about using a muffin pan to roast things in. I use my stoneware large bar pan from the Pampered Chef to cook just about everything that goes in the oven.

That muffin tin idea is interesting… I’ll have to try it AND the turkey green chili tacos… That might also make a good Green Chili Enchilada, too! I’d never thought about using turkey before, though chicken and beef are both great, so turkey should be too! Thanks for the ideas! Linda from Corgi Country
