Salads
Formerly abhorred and frequently mocked by yours truly. Now a daily fact of life. *Such* a big change for me. And.. you know, they’re not ENTIRELY bad. I still don’t find them “fulfilling” like other food… but they are light and fresh and surprisingly yummy. I think I could stand to work on portion sizes. Sometime back, I heard the term “a salad as big as your head” and really took that to heart. When I started eating a salad every day two weeks ago, I was making them in this ENORMOUS glass bowl we have from Ikea. Earl expressed concern, and I have since downsized to a bit more of a medium sized bowl. But still… too big?
I make a one like this almost every day for lunch.

Usually a mish-mash of whatever we have on hand. Today’s came out particularly good. It has:
- spinach
- pea shoots
- quinoa
- pecans
- pumpkin seeds
- white and green beans
- cukes
- olives
- lemon juice, balsamic and EVOO, plus S&P and a dash of parsley and celery salt
- oh yeah and I couldn’t resist throwing in just the teensiest bit of parm cheese
Fall Fitness Challenge is going right along. I regressed a bit yesterday, but am back at it now. And took 2 minutes off my 4 mile time this morning, so perhaps taking a lazy day off wasn’t entirely catastrophic. Off to the gym to lift, and then school all night (5pm-10pm).

yum on the salad; I think as long as you don’t overdo on the dressing, size doesn’t matter too much with a salad; so many low calories with most of its fixings! good for you for taking off time on your mile! keep up the good work!
